Soyrizo and Potatoes | Sheet Pan Meal

This is one of my favorite throw-together dishes because it makes future meals soooo easy to figure out. Whenever I've got this savory mix waiting for me in the fridge, I'm totally stoked about making a Burrito, Rice Bowl, Nachos, or even a Salad, in a matter of minutes. Plus, I just never get sick of these flavors.

You can totally eat this by itself, but I use it as a base for varying meals throughout the week. All you gotta do is whip up a delicious Sauce— paired here with a Cashew Lime Crema— cook some Rice, and keep some pre-chopped Veggies in the fridge. With some pantry staples like Tortillas n Chips, you've got a bunch of easy n versatile meals at your fingertips.


[Makes: ~7-8 cups]

Ingredients

drizzle of Oil

2 x Sweet Potatoes

2 x Yellow Potatoes

1 tsp Onion Powder

1 tbsp Chili Powder (sub Taco Seasoning)

Black Pepper, to taste

Salt, to taste

1/4 cup Water

1 can Pinto Beans

1 can Black Beans

1 can diced Green Chilis

1 package Soyrizo

1 x Lime, optional


Equipment

Oven

Large Baking Tray

Strainer


Instructions

  1. Gather your ingredients.

  2. Turn your oven to 425 degrees.

  3. Drizzle baking tray with some Oil.

  4. Wash your Potatoes and peel the Sweet Potato, if you want. Then dice them into small pieces.The smaller they are, the faster they'll cook. Put em on the tray as you go.

  5. Sprinkle Onion Powder, Chili Powder, Pepper, and Salt over top of the Potatoes. Fold everything together with a spoon/spatula to coat Potatoes thoroughly.

  6. Add the Water to the tray, set a timer for 25 minutes, then pop the Potatoes in the oven. Stir/flip once in the middle of cooking (but not a big deal if you don't).

  7. While the Potatoes cook, drain and rinse the Black and Pinto Beans in the strainer. Drain the Green Chilis, too, but don't rinse.

  8. Take Potatoes out of the oven when the timer goes off and add the Beans, Green Chilis, and Soyrizo to the Potato tray. Gently fold everything together.

  9. Set a timer for 10 min and stick the tray back in the oven to cook a lil longer.

  10. After your timer goes off, take the tray out of the oven to cool for a few minutes.

  11. Squeeze some Lime juice over everything.

  12. And that's it! Grab a bowl of Rice, some Chips, or Tortillas to wrap this all up in and enjoy!


Notes

  • Diced Green Chilis come in a couple different sizes. I like to use the larger, 7oz ones. But you can use the smaller ones if ya want.

  • Mix it up: add in some frozen Corn or fresh/pickled Jalapenos. Use only one kind of Potato or Bean. Add in fresh Garlic and Onion.

At the top of this recipe, I walked through the meal prep that works for me and my ADHD. I call it "meal building". I personally find it wayyyy more flexible than ordinary meal prep, and far more interesting too. I have a post outlining my "Meal Building" process, but it's long overdue for a refresh.
