Simple Roasted Sweet Potato

Wait a second, Grapes, don’t you already have a Roasted Sweet Potato recipe? As a matter of fact, I do. However, this one’s easier.

If you love Roasted Sweet Potato & White Beans, you’ll enjoy this recipe just as much. It’s essentially the same deal, Smokey Paprika paired with flavorful Onion Powder tossed over creamy Sweet Potato pieces.

Try using this as a base in your Meal Building routine when experiencing those low-energy days/weeks/months. I love sprinkling some over Kale Salads and dousing the whole thing in Agave Mustard Dressing.


{ Difficulty: Level 1 }
[ Makes ~32 oz Roasted Sweet Potato ]

Ingredients

3-6 x Sweet Potatoes*

1 tbsp Onion Powder

1 tbsp Smoked Paprika

1 tbsp Safflower, Sunflower, or Olive Oil

Salt & Pepper to taste

Instructions

  1. Turn oven to 450 degrees.

  2. Chop Sweet Potatoes into medium pieces (quarter sized). Peel if you want, but I usually don’t.

  3. Place pieces on a baking sheet and toss in Oil, Onion Powder, Smoked Paprika, and Salt.

  4. Spread evenly on baking sheet and bake for 30-35 minutes, stirring once halfway through.

  5. Voila! Sweet Potatoes are ready to go.

Notes

  • * Number of Sweet Potatoes varies depending on their size. If they’re bigger than your hand, opt for fewer, or increase the amount of Spice used.

  • Stores in airtight container in fridge for ~5-7 days
