Lemon Marinated Summer Squash

not sure what to do with all that squash?

This vibrant recipe of my past been revitalized, thanks to the bounty of Yellow Summer Squash taking over the farmer's market.

The flavor profile is pretty much just Lemon, Herbs, and Red Onion—I think the simplicity keeps it real nice and refreshing on hot days.

Serve this flavorful Squash as a side to some Veggie Burgers, pile it on a slice of toasty Bread, or stir it into some just-cooked Pasta for a bright, Lemony, Squashy dish.

a note: This is best eaten fresh, but let it mingle in the fridge for an hour before serving. You want the Marinade to soak into the Squash, and the Lemon Juice to macerate (soften) the Onion.


[Makes: ~2 cups Marinated Squash]

Ingredients

1/4 cup fresh Lemon Juice
(~1 Lemon)

1/2 cup Oil
(I like Olive or Grapeseed)

1 tbsp Fresh Thyme leaves

1/2 tsp Salt

1/2 tsp Sugar

1/4 tsp fresh Black Pepper
(a few cracks)

2 x small Summer Squash*

1/4 x Red Onion


Equipment

Citrus Juicer

Storage Container with Lid

Measuring Cups and Spoons

Cutting Board

Mandoline or Knife


Instructions

  1. Gather your ingredients!

  2. Combine the Lemon Juice, Olive Oil, whole Thyme leaves, Salt, and Sugar in your storage container to make the Marinade.

  3. Thinly slice the Squash and Red Onion using the mandoline or knife. I like elongated coin-shaped slices of Squash and half-moon Onion, but you can do strips or circles.

  4. Place sliced Veggies in the Marinade one by one so that they're all covered. Once they start piling above the Marinade, push em down with your fingers or a spatula so all the Veggies are coated.

  5. Close the container and place in the fridge. Let the Veggies soak up all the flavor for at least 1 hour.

  6. And that's it! Enjoy this Squash straight from the container or as part of a bigger meal.


Notes

  • * Opt for smaller Summer Squash vs larger ones! They're far more flavorful and delicate. This is important when eating them raw since you're not adding any char or caramelization.

  • This Squash is best enjoyed within 1-3 days.

  • If you don't want this SUPER Lemony, use a tad less Lemon Juice and add a few splashes of Water.

  • Sub the Thyme for Parsley, Mint, or Basil. Use twice as much when using these leafier herbs.

  • Sub the Summer Squash for Zucchini or even Cucumber

  • Sub the Red Onion for 1 x Shallot

  • Not sure what to do with the rest of your Red Onion? Add it to some Slaw, a Lemon Veggie Salad, dice and freeze for future recipes, or Quick Pickle some slices.
